Singapore is the layover that keeps being underestimated. Give it four days instead of a transit lounge and it becomes a city of hawker centres that outcook most fine dining, a botanical garden with a UNESCO listing, and neighbourhoods — Katong, Tiong Bahru, Little India — that reward walking at the pace of a long breakfast. We plan it as a food city first and a skyline second.
